That image excludes the most interesting part of the process.

What a coupage truly is has less to do with the number of grape varieties combined and more to do with the relationship established between them. Why can a winemaker taste an extraordinary Garnacha and still decide it needs company? The answer begins with understanding what a coupage is really about and what distinguishes it from a simple blend.

It’s important to clarify one thing from the outset: not all wines undergo this process, and not doing so is not a flaw. Some wines express themselves better on their own. Others require that interaction between varieties or batches to reveal their best qualities.

What is a wine blend?

A coupage is the intentional combination of different wines, grape varieties, or batches from the same winery, with the aim of creating a final wine that is more complete than any of its components separately.

It’s not about simply adding them up. Each base wine contributes something specific—fruit, acidity, structure, color, length—and the winemaker’s job is to find the perfect balance where these elements complement each other. A well-executed blend is seamless: the result is perceived as a single wine, not merely a collection of recognizable parts.

The term comes from French and is also used in Spanish to refer to a wine blend. Knowing what coupage means helps to understand its equivalent: both words describe the same thing, combining different wines to achieve something that none of them can achieve on their own.

Mixing varieties is not the same as assembling a wine

Here’s the most common confusion. In everyday language, “mix” suggests something careless. “Assemble,” on the other hand, implies care and consideration.

A wine blend never starts with the question “What do I have available?” but rather with a very different one: “What does this wine need to be complete?” That difference changes everything. Grenache can contribute ripe fruit and body; Carignan, acidity and vibrancy; other varieties can add color or a firmer texture. None of them is better on its own. What matters is how they behave together.

That’s why winemakers taste the base wines separately before making any decisions. They test combinations in different proportions, sometimes with differences of just five percent, and assess how the overall effect changes. A variety that dominates on its own can become subtle alongside another. And a wine that seemed closed can fully open up with the right accompaniment.

How to make a coupage

The process begins long before anything is blended. Each variety, each plot, or each tank is vinified separately so the winemaker can evaluate its individual character without interference. At Celler Mas Doix, for example, the fruit from one plot is not the same as that from another: Belissario, Coma de Cases, or La Vicaria may share the same municipality and still produce base wines with different acidity, color, or texture before anyone even thinks about blending them.

Once fermentation is complete—and sometimes after an initial aging in oak barrels—the comparative tasting phase begins. The base wines are tasted individually and in different combinations, usually in small laboratory batches, before deciding on the final blend on a larger scale. There is no fixed formula: the proportions that worked one vintage may not be repeated the next, because each harvest yields base wines with their own unique character.

This decision isn’t solely a matter of taste. It also reflects the intention behind each wine’s creation: whether it seeks a fresher, more direct expression or one with greater aging potential. In that sense, the blend is one of the final decisions that define a wine’s future, even though its roots are already in the vineyard.

It’s worth noting that the proportions are rarely exact. A blend might consist of eighty-seven percent of one variety and the remaining thirteen percent of another, without that percentage adhering to any predetermined rule. It’s simply adjusted until the tasting confirms it, and that’s that.

Not all wines are born to be a blend

Some wineries work almost exclusively with single-varietal wines, made from a single grape variety, because they believe that the plot or the variety itself already possesses everything necessary to stand on its own. This isn’t a stance against blending, but rather a different way of understanding the same objective: for the final wine to clearly express its origin.

The decision is usually made vineyard by vineyard. A plot with a very distinctive personality can lose nuance if it’s diluted with another grape. Conversely, a more understated base wine can gain body, aromas, or length thanks to the right blending. That’s why neither blends nor single-varietal wines are inherently better: each approach reflects what the grapes have yielded in that particular vintage.

Coupage of varieties and coupage of items

When we elaborate on coupage, we often think only of the blending of grape varieties. But the concept is broader.

There is also the possibility of blending batches of the same variety from different plots, different soils, or tanks that have undergone different aging processes. Two Garnachas from the same winery can be extremely diverse if one comes from a vineyard with more sun exposure and the other from a cooler plot. Blending them is not simply mixing without a plan: it’s about recognizing what each origin contributes and deciding how they complement each other. In llicorella soils, the loose, dark slate typical of Priorat, a difference in elevation of just a few meters can alter drainage and how the vines receive heat, so two neighboring batches can behave differently.

A blended wine, therefore, does not necessarily have to combine several varieties. It can originate from a single grape grown in different plots and then blended with the same logic of balance.

The criteria, not the quantity, are what define a coupage

In Priorat, Garnacha and Cariñena are two of the varieties with the greatest historical significance in the region, and their combination—when it occurs—is one of the most characteristic blending techniques of the area. Each winery decides, vintage by vintage, the role to give to each variety. It is not uncommon to find vines planted in 1902, with low yields due to their age and characteristics, which produce batches with their own distinct personality—precisely the material on which the decision is later made whether it should be blended or left on its own.

Understanding what a coupage is helps you read a label with different eyes: behind that word there is not an improvised mix, but a series of decisions made wine by wine, tasting by tasting.

A blend isn’t about accumulating varieties but about finding the right balance between them. Discover the wines of Mas Doix and learn how Grenache, Carignan, and other varieties contribute to each wine.

For many wine enthusiasts, the word “coupage” sounds almost mechanical: taking two or three wines and combining them in the same tank.
